These Emmer Sourdough Pasta Twists are made from sustainably grown (ASP Certified*) Emmer (Triticum dicoccum) wheat.
With origins in Ancient Egypt, in 9700 BC Emmer was one of the first cereals to be domesticated in Levant (modern day parts of the Middle East). It is an ancient member of the Farro family and like other ancient grains is high in fibre, protein, vitamins and minerals.
Having a buttery, wholesome and sweet taste, this pasta is best paired with tomato based sauces, and is especially suited to pasta bakes and pasta salads.
Stoneground flour is long-fermented using Berkelo’s “mumma” (a wild-fermentation of flour, water and nutritional yeasts), and is then slow air-dried to create Australia's first sourdough pasta, boasting improved digestibility and higher nutritional value.
This unique Pasta range has been created in collaboration with family business, Wholegrain Milling Co., who supply Berkelo with high quality, 100% certified sustainable and organic flours. Their nutrient-rich, stoneground flours are made using grain sourced from local farmers who focus on soil health, and use regenerative farming techniques to support biodiversity and long-term sustainability for their environment.
Plastic-free packaging is certified home-compostable & commercially-compostable so that it can be returned to nature after use.
*ASP Certified Sustainable produce is tested to ensure that it is: Residue-Free, Non-GMO. Independent emissions calculations on their wheat show 75% fewer Green House Gas emissions than conventional production. ASP continues to test their certified products to ensure that they deliver food of the highest quality that is nutrient-dense, and monitor their farmer’s soils to ensure the practices in place are building soil.
