Ingredients
1 ½ cups plain Greek yogurt
1 cucumber, peeled and seeded
3 T olive oil
1 T freshly chopped mint
1 T freshly squeezed lemon juice
salt to taste

Set the yogurt in cheesecloth over a bowl and strain the yogurt in the fridge for 2 - 3 hrs. Pulse the cucumber in a food processor or grate it until you have the consistency you want. Using two layers of cheesecloth, set cucumber in the middle and gather together. Squeeze over the sink to remove as much liquid as possible. Combine all ingredients in a medium bowl and gently stir to combine. Taste and adjust seasonings if needed. Toast some pita bread and enjoy!
