Quesadillas with Pear and Kiwifruit Salsa

Ingredients

SALSA:
2 C pears, chopped
2 C kiwifruit, peeled and chopped
½ C red onion, diced
2 T fresh mint, chopped
1 T grated lime rind
2 T fresh lime juice
1 jalapeno pepper, seeded and diced
QUESADILLAS:
8 flour tortillas
2 C shredded Monterey Jack cheese
½ C chopped green onions

Directions

To prepare salsa, combine all ingredients; cover and chill. To prepare quesadillas, place 1 tortilla in a nonstick frypan over medium heat and top with about ½ C of cheese. Sprinkle green onions and top with another tortilla. Cook about 3 minutes, pressing down with a spatula until the cheese melts. Carefully flip and cook the other side in the same way.

It's fun and challenging to cook with what's available and the produce is so much fresher than anywhere else. Our family loves them!
