Kumara Salad with Coriander Lime Dressing

Ingredients

2 kgs kumara
2 -3 T olive oil
salt and pepper
Handful mint leaves, chopped roughly
Large handful coriander, chopped roughly

Dressing:
4 cloves of garlic, minced
Juice and zest of 4 limes
2 T brown sugar
2 T soy sauce
2 T fish sauce
2 T peanut oil
2 tsp sesame oil
1 red chilli finely chopped

Directions

Preheat the oven to 200. Cut the kumara into cubes; don’t peel. Toss with the olive oil and roast in the oven for about 40 minutes. Combine the garlic, lime juice and zest, sugar, soy, fish sauce, peanut oil, sesame oil, chilli. Drizzle the lime dressing over the cooked kumara, either hot or cold. Sprinkle the mint and coriander on top to finish.
