Kiwifruit Loaf

Ingredients

2 cups flour
1.5 tsp baking powder
Pinch salt
1/2 cup butter
1/2 cup sugar
2 large eggs
1 cup mashed kiwi fruit

Directions

Sift together flour, baking powder and salt in a bowl. In a separate large bowl cream butter and sugar together until light and fluffy. Beat in the eggs to the creamed mixture one at a time. Stir in the mashed kiwi fruit. Fold in dry ingredients and stir gently until just combined. Spoon batter into a greased loaf pan and bake at 170C for approximately 45 minutes minutes or until toothpick inserted comes out clean. Cool for 10 minutes on wire rack and remove from the pan.

It's fun and challenging to cook with what's available and the produce is so much fresher than anywhere else. Our family loves them!
