Grilled Pear, Walnut and Spring Onion Salad

Ingredients

2 pears
olive oil
1/4 cup of walnut pieces, toasted
3 spring onions, sliced.
Lettuce
Blue or feta cheese
2 tbsp balsamic vinegar
1 tsp seed mustard
Salt and pepper

Directions

Preheat the oven to 180 degrees. Slice the pear, toss in 1-2 tbsp of olive oil, season with fresh black pepper. Bake in the oven for 15-20 minutes until the edges are browned. Leave to cool. Wash and dry the lettuce, combine with walnut pieces, spring onion, roasted pear and crumbled blue or feta cheese. Mix together the dressing and season according to taste.

It's fun and challenging to cook with what's available and the produce is so much fresher than anywhere else. Our family loves them!
