6-8 Grapefruit

Remove the zest of the grapefruit using a peeler or sharp knife and chop the zest into little pieces. Remove as much of the the white pith from the grapefruit as you can (leaving some on is ok). Chop the grapefruit segments and remove the pips. Weigh the amount of grapefruit mix you have, then measure out the same amount of sugar. Add sugar, grapefruit, zest & whiskey to a large pan and bring to the boil, stirring very regularly. Simmer for 20-30 minutes, testing every 10 minutes until the marmalade sets. To test this, place a small dish in the fridge to cool. Drop a small amount of the marmalade onto the cold dish - if it sets it is ready. Transfer to sterilized jars.
