Ingredients
1 or 2 fennel bulbs, stems and fronds removed and cut into ¼” pieces
olive oil, salt & pepper
½ C Mozzarella cheese, crumbled
½ C Parmesan cheese, crumbled
½ C bread crumbs
2 t thyme or tarragon

Cook fennel in boiling water until just tender, about 5 minutes and then drain and pat dry. Toss fennel with olive oil, salt and pepper and arrange in a baking dish. Sprinkle mozzarella cheese on top. Combine the parmesan cheese, herbs and bread crumbs and sprinkle mixture on top of the mozzarella. Cover and bake for about 15 minutes at 200 and then remove cover and continue to bake until cheese is melty and crumbs are beginning to brown.
