Ingredients
1 head broccoli
2 T cider vinegar
2 T dijon mustard
½ t garlic, minced
2 t honey
5 T olive oil
¾ C red onion, thinly sliced
1 apple, thinly sliced (just before you need it)

Place sliced onion in a colander in the sink. Trim broccoli and cut into florets. Cook in boiling water until bright green and just getting tender. Drain over the onion in the colander, wilting the onion ever so slightly. Rinse with cold water and then shake to drain well and transfer to a serving bowl. To make the dressing, combine the vinegar, mustard, garlic and honey. Whisk until smooth. Pour dressing over broccoli and onions. Place this bowl in the fridge until ready to serve.
