Ingredients
2 or 3 bunches bok choy
1 t vegetable oil
1 piece of ginger, about as big as your thumb
1 good sized clove of garlic, minced
Salt to taste
Sesame seeds, toasted (for an optional topping)

Cut off the bottoms of the bok choy to expose all leaves. Set in a bowl of water and gently swish it around to release all the dirty bits. Let sit for a minute or two. Swish again and rinse. In a wok or saute pan, add the oil, ginger and garlic. Cook over medium heat until sizzling, taking care not to burn the garlic. Add the bok choy and mix to coat the leaves. Stir around until the leaves are tender. Top with toasted sesame seeds (if using) and serve.
