Ingredients
A bunch of kale leaves, stems removed
1 avocado
Juice of one lemon
½ t fresh ginger, minced
¼ t garlic, minced
tamari or soy sauce, to taste
drizzle of honey, to taste

Scoop out the flesh of the avocado and mash it with the lemon juice, ginger, garlic, tamari or soy sauce and honey. When smooth, add in the raw kale leaves and start using your hands to massage the dressing throughout. Do this for a good 2-3 minutes. This process breaks down the tough structure of the leaves which will make them less bitter-tasting and also easier to digest. When the leaves are dark and wilted, taste and season to your liking. Add your favorite salad toppings.
