One of The New Paradigm’s favourite coffees, "Willy Juarez: El Guatalón" exemplifies what they love about Guatemalan coffee: it has a super clean flavour that makes it so easy to drink everyday. It is now the New Paradigm’s 3rd year of buying coffee from El Guatalón; This time it's a single lot coffee from one of their farms, called "Guatalón", and produced by it's namesake Willy Juarez, who is Guillermo's son.
The name “El Guatalón” comes from the term “guatal”, a word used in some Central American countries that refers to a piece of land where cattle graze after the corn harvest.
This 100% washed pacamara lot placed 27th in the Cup of Excellence competition, which is quite an achievement!
This coffee underwent a short dry-solid fermentation before being washed with clean water from Guatalon’s natural wells; It was then sundried for 10 days. This process leads to quite an even roast, which increases the cleanliness of flavours.
The New Paradigm Roasters have increased the moisture content of this coffee to 16.5% 24 hours before roasting, which reverts it back to it's pre-shipment state and increases brightness and sweetness.
