Our go-to essential lentil, sometimes called brown because of their skin colour – but red on the inside. We don’t hull, (take the skin off) as it’s a good source of dietary fibre, lowers the GI and has a fair bit of flavour. Lentils don’t require soaking, and cook in 15 – 20 mins or until al dente. These lentils have a delicate flavour, are great in summer salads, with lighter meat and poultry dishes. They can be sprouted to add to salads, stir fries or sandwiches and rolls.
