Dirt(y) Inc.’s Big Red Bolt lentils are a medium-size red lentil grown by the Schilling Family. They are unhulled, so are brown on the outside but red underneath. Bolts have a more meaty, robust flavour (compared to the baby reds); They are a great accompaniment to meat and game, they make a good lentil patty and are also perfect in bold summer salads, winter braises and soups.
The Schilling family are third generation agricultural producers who have a strong affiliation with the land, and feel a genuine responsibility to act as custodians for future generations. Mark Schilling is a keen supporter of sustainable farming practices. His respect for the land, use of cutting-edge technology and equipment, paired with his high standards have resulted in his produce establishing itself as the core of the Dirt(y) range. He has also become a core member of the Dirt(y) Inc. business itself- a role in which he collaborates with a network of other local farmers who share the same growing principles, to showcase their produce within the Dirt(y) Inc. range.
Dirt(y) Inc.’s philosophy is to source the most ethical, local and fresh ingredients. Sourcing seasonally available traceable single-origin batches; they support farmers using sustainable practices (water-wise, natural farming processes) and traditional artisan farming methods. Products are minimally processed, and all packing is done locally!
